Upcycling and Biofilms: Innovative Synergies for the Food Industry

Biofilms are communities of microorganisms attached to surfaces that are surrounded by a self-produced protective layer. These microbial consortia can present significant challenges for the food industry in terms of food safety, but they can also be used in upcycling strategies. Through the fermentation of agri-food by-products, microbial consortia can transform waste into value-added products, such as flavourings, through precision fermentation. Despite its potential, fermentation has not been sufficiently exploited for this purpose. This talk will address how interactions in biofilms can drive sustainable upcycling processes in the agri-food industry.
